Theme and page-builder approaches can introduce extra abstraction, plugin dependencies, and less control over generated output. That can still be fast when it is well built. The risk is losing control of markup, JavaScript, and long-term maintainability.
A purpose-built component and design-system approach gives greater control over those layers. We still use WordPress where it is the right platform, with dependencies kept deliberate rather than accidental.

Do you do the copywriting as well?
